Gingerbread Men Recipe

Gingerbread men are a holiday classic that bring a bit of fun to the kitchen, but there’s so much more you can do with them beyond baking. Whether you’re looking for festive craft projects, creative holiday gifts, or a way to entertain kids, here are just a few ideas for turning gingerbread men into a fun holiday activity that goes beyond the cookie tray.

  • 225g plain flour, plus extra for dusting
  • A pinch of salt
  • 2 tsp baking soda
  • 2 tsp ground ginger
  • 1 tsp cinnamon
  • 75g unsalted butter
  • 100g soft brown sugar
  • 100g golden syrup or honey

STEP 1:

Preheat your oven to 190°C (170°C fan) and line a baking tray with baking paper. In a large bowl, sift together the flour, salt, baking soda, ginger, and cinnamon. In a small saucepan, gently heat the butter, sugar, and golden syrup (or honey) until smooth and fully combined. Allow this mixture to cool slightly, then pour into the dry ingredients, mixing to form a dough. Wrap and chill the dough for at least 30 minutes.

STEP 2:

On a floured surface, roll out the dough to about 6mm (¼ inch) thickness. Use a gingerbread cutter to create your shapes, gathering and re-rolling any leftover dough to make more cookies. Arrange the cutouts on your prepared baking tray, with a little space between each. Bake for 10-12 minutes or until golden brown. Remove from the oven and allow to cool on the tray briefly before transferring to a wire rack to cool completely.
